San, the Brussels bowl bistro created by Sang-Hoon Degeimbre, is beefing up its menu for the summer.

The idea behind it is to ask a fellow chef to come up with a creative recipe. The chef from L'Air du Temps asked Clément Petitjean (La Grappe d'Or in Torgny) to do just that. He created something spectacular mixing cheese from La Bergerie d'Acremont, barely cooked lobster, raw fennel, just a pinch of yuzu and the juice of cherries marinated in red wine. This should be enough to keep you waiting until the opening of a second restaurant in the Sablon in the fall.
