We meet Madame Dao, owner of the Hanoi Station restaurant chain, at the Cameleon outlet in Sint-Lambrechts-Woluwe. Her restaurant even boasts a Vietnamese library. "Our speciality is Hanoi pho. I've brought the flavours, ingredients and spices from Hanoi here for our European and Vietnamese customers."
