At Le Longue Vie restaurant, the kitchen draws inspiration from a wide range of influences – Mediterranean, Japanese, Chinese… – yet one constant remains: a focus on local, organic seasonal produce. Meanwhile, the wine list is ever-changing. "If a customer is knowledgeable about wine and our sommeliers have the time, they can venture down to the wine cellar together. This way, the customer can make their own selection and think, 'I've already heard about that Italian wine – I’d like to try it.'"
