Bakery and brewery Janine in Forest: 'We make beer with bread and bread with beer'

Bread represents twenty percent of food waste in Brussels. And that set Janine's founders thinking. "On the one hand, we have opened a bakery with bread made from draff, or malt. We let it dry and make bread with it. On the other hand, all our beers are brewed with unsold bread."
